Pick up a copy of the Daily Mail, Saturday or Sunday and they have good travel sections which will have a number of cheap travel insurance companies. Get a year policy from the day you leave home, and buy more when abroad if needed.
Be aware that you must tell an insurance company everything. If you leave them a get-out, they will use it to not pay you.
Decide what places you want to visit and book the flights now. Already many cheap seats have gone. From Beijing you can go to Hong Kong, then Bangkok or some other destination and work your way down through Malaysia. Not really that much in Singapore, and it's expensive.
Be aware that Perth is on the other side of Australia and that it will cost substantially more to get to NZ from there than from say Sydney.
