Once, you put in a city, it will list (and show on a map) the closest state-run (and private, too, in some cases) campgrounds. For example, I put in Mexican Hat (a city near Monument Valley) and it came back with the following:

In response to your question about tours at Monument Valley, you should know that this area is on Indian (American Indian) land and you are required to take a tour run by an Indian group if you take one. They generally will take you by jeep to the many major sites (since they are only reachable by dirt roads--or simple paths)--and they don't like people getting lost. The prices are fairly reasonable in my view for a 3 hour tour or so. Try to get one fairly late in the day (maybe starting at 3 PM or so)--because the views when the shadows are cast across the landscapes are remarkable.
As far as hikes, either one of the Grand Canyon or one at Moab (or maybe a bike tour) would be best. I'd also suggest that you consider the boat ride tour that leaves from the south end of Lake Powell (Lake Powell lodge near Page) and that goes to/from the Rainbow Bridge is one you won't forget.
I'd spend my time as follows (sites listed indicate overnight stay periods)--you also have to allow for the drive time to the next spot:
2 days Grand Canyon, 1 day Lake Powell (on the boat tour)--stay at hotel in Page, 1 day Monument Valley--campground nearby, 1 day Moab--campground nearby, 1 day drive through Capital Reef and then down to Bryce Canyon--campground nearby, 1 day drive through Zion with a stay at either a campground near Hurricane/St. George--or treat yourself by driving to Mesquite, Nevada and staying at the hotels there (if you book this early the rates are unbelievably cheap--and the hotels are nice with great pools). Then return to Las Vegas the next day. This gives you 7 days outside of Las Vegas--and thus 2 nights in Las Vegas--and allows you to get back there on the last night with plenty of time to get to a pool or see a show.

P.S. If you want to spend an extra day in Moab--then you might want to either skip the boat tour to the Rainbow Bridge (going straight to the Monument Valley/Mexican Hat area--or else leave Las Vegas on day 1 and spend the night at the Grand Canyon. Alternatively, you could also spend just the one day at the Grand Canyon as well.
In thinking this over, you probably would want to spend just the one day/night at the Grand Canyon and spend the extra night at Moab. I do believe there is more to do and see at Moab. However, in this case, you obviously will be skipping the Grand Canyon hike and doing a hike (or bike ride) in the Moab area instead.

Keep in mind that lodging and camping in these mentioned National Parks are by reservation and can be booked 6 months to 1 year in advance. Camping in National Forests is free and there are some Awesome places on the North Rim of Grand Canyon.
The website I listed is not for National Parks, but rather for Utah's state parks--which has much more reasonable prices (usually $8 or so per night tops--sometimes, less).

Camping in the state/national parks is smart. I would have love to have camped for my first visit -- the cost of food and lodging at the Grand Canyon can really add up quick. I definitely recommend the one day at the Grand Canyon. OP do you know if you're planning on hiking down or around the rim?
I love going to Moab, Delicate Arch is the main one people hike to and you do see a lot of Moab on that hike. If you are into biking, the Slickrock Bike Trail is really cool because you go through petrified sand dunes and empty sea beds. It's 13 miles long, but you can take a shorter route as well.
A great hike to go on in Zions (besides the Narrows) is Angel's Landing.
