Travelling around Thailand is easy. You can book with a travel agent or do it yourself. High season ends April so May should be quieter (though hot and humid), but still busy. You can book buses and trains as you go so no need to pre-book them. For best prices, flights need to be booked early.
It helps to book some accommodation before you go instead of dragging luggage around when there and missing out on bargain places.
Visa and visa waiver are for 30 days and not a month.

Which also has links to Cambodia, Vietnam and Laos. You need to sort out a visa for Vietnam.
Also take along some passport photos for visa purposes. It doesn't hurt to have a photostat of the information page of your passport in case of loss, and you should carry your passport at all times (and not just a copy). Also you should still have six months validity on your passport on the day you fly home.
