Euro Backpacking/WWOOF help

Hello, I'm planning a long trip (3 months ish) to europe where ill be backpacking through hungary, croatia, bosnia, romainia, bulgaria, greece, many countries, i don't really have it planned out, I'm just going with the wind. anyway, my main focus is WWOOFing so ill see big cities/stay in a hostel a few times but rarely. ill be cycling on my road bike through the countryside from farm to farm. camping along the way for however many days it takes to do X amount of miles to each farm. I'm not doing this like a normal euro backpacking trip where you stay in hostels, spending money on booz and eat out every meal. when I'm between farms i plan to live, sleep, and eat as someone backpacking through through the mountains would (camping, eating dehydrated food with a camp stove and such). anyway, I'm seeking some advice mostly on how big of a backpack ill need, how much money you think ill spend (remember i am eating and sleeping for super cheap) on food, a hostel maybe twice a month, water, beer (I've already got a nice tent, bike, bag, all the camping gear). what will the climate be like, I'm flying to budapest june 11th and ill be in this area until september, so what type of cloths should i bring? also, any safety concerns/ getting my shit stolen.

I haven't been to those countries yet (hoping to go soon!), so I can't give you any specifics on the region. However, I have done several of the more rough back packing style of travel. Have you ever done a cycling / backpacking trip? If not, I'd highly recommend taking at least an overnight weekend trip to see how your gear feels and how much food you'll need (everyone's different). I'd also suggest training with the extra weight.   Always ensure you store your food separate from your gear in more rural areas to prevent animals, etc. from getting too close, and you may want to check into the legalities of free camping in the countries. For water, are you planning on bringing a water filtration system or bringing enough water with you every time.

Whenever I have tented, I always bring a cable lock (which you can also use for your bike) and lock my personal items up. In the case of the tent, I've found that small travel locks will go through the zipper and prevent people from just walking in when you're out & about.

The best bet is to keep it as light as possible, but be sure to make sure you have adequate safety supplies.

Sounds like an epic trip! I'd say don't bring much stuff with you, though bring enough to keep yourself warm.
I went to Budapest in spring time and it was very cold, so bring a hat and gloves for after dark. you don't want to be caught with out any warmth, but summer is nice I have been told.

As for packing and that if you're bringing a stove try to use that as little as possible as you don't know when you will be able to get a gas refill but learn to build small fires for heating water and such, this would be good as you can find wood wherever you camp.
don't pack a lot of toiletries as they take up so much room! If you buy the right soap you can use it on your body, laundry and food. Bring toilet paper (you always need this when backpacking) but take out the cardboard tube so you can pack the paper flat. and do try and take one of those compressed deodorant cans for when you need it.
you should buy stuff as you need it when you're on the road like batteries warm/ cold cloths because you don't want the extra weight.
make your bag look very dirty and tatty, add extra stitching and some gaf-tape on the straps to make it look like it's not worth stealing. though bikes are nicked a lot in Europe so get 1 or 2 locks that are good.

flutterby7 is right about the overnight weekend to work out your load and how you're gonna do it. and it would be a fun weekend.
