Are the 500 Pounds per person for flights/hotel & spending money?
Essaouira, Morocco. Not expensive, sunny but not hot, loads to do...
I would recommend Tukey, Tenerife and the Portuguese Islands, such as Madeira. Venice is not that hot around that period and it does necessarily have nice beaches. It is known for its channels and all the beautiful beaches are located outside the city.
£500 is for hotel and flights and fees
Lido de Jesolo on the Venetian Riviera is a great shout. You'll have some fantastic beaches but Venice and all its cultural attractions are within easy reach too. An of course, the gondola ride is a romantic must!
I love Cattolica - it is close to Rimini (and its nightlife), San Marino (for a bit of sightseeing) and it has really nice beaches. You can do daytrips to places like Rome and Florence too or go on a boat trip up to Venice.
