To start with try Seek.com.au for jobs. Don't forget you'll need to get a Responsible Service of Alcohol (RSA) certificate when you arrive as you won't be hired without one.
There are also loads of great bars in Melbourne, which ones will be hiring when you arrive is a different question. Check out broadsheet.com.au or even yelp.com.au for popular bars and then go from there.

Rikki, simply put "Responsible Service of Alcohol Australia" into Google and you'll get loads of on-line options to get the RSA Certificate.

Please note Victoria does not accept online RSAs and in some states you will require a separate RSA (forgive me, I've momentarily forgotten which states are covered by one certificate). You will still be able to google the course though, as there are loads of trainers in Melbourne.
And yes, I'm from Melbourne but currently in the UK.
