Not all hostels are automatically party hostels although I would recommend not staying in St Kilda if you prefer to stay away from that kind of atmosphere. There are plenty of other options in Melbourne, quite a number in the CBD and also North Melbourne, which would probably be better suited.
You might also like to check out Flatmates.com.au for some of the possible share house options. Just remember that at this time of year there will be plenty of uni students as well as travellers looking for a place.
