I traveled alone for two months in Europe this past summer, and one thing I learned was not to plan so much. I had bought a return ticket out of London, and it was very limiting to leave out of a certain place at a certain time, because I didn't end up doing the itinerary I had planned.
So far, my experience is I can buy a 1 way ticket to everywhere except US and Canada.
Try www.airaisa.com, I bought my 1 way everywhere on their routes.
Some countries do require foreign visitors to show return tickets at the immigration/customs. If that's the case, you might need to buy an open jaw ticket then. Here's more information for you regarding India Visa.

I am from the UK, I have travelled a lot of SE Asia but I will soon travel India. As far as I know, I can enter India with a one way ticket (no onward journey). Once you have your Indian visa and then you travel by land into Nepal (which is no problem), you cannot get back into India for another 2 months after leaving.
But, you need an onward ticket flying into Thailand with non-budget airlines. I have flown around SE Asia with budget airlines and you don't need an onward flight, but flying from London to Bangkok with Thai or British airways, you do need an onward flight. Use Airasia, I have never needed an onward flight using them (it's airline rules.. not the country).
Again, you should be able to fly to India without an onward flight (ask your airline whom you are travelling with) and then after that, using non budget airlines, there should be no problem.
