A couple of suggestions for your 6-7 days.
1.
Route 1 up the west coast and then on to Taupo 2 days
Rotorua 2 days
Route 5 down to Napier/Hastings for 2 days
Back to Welly along route 2
or 2.
Take the passenger ferry to Picton on the South island (3 hours)
Pick up a car and drive from there via Nelson, St Arnaud, Hanmer Springs,
Christchurch, Kaikoura, Blenheim and then back to Picton
ferry back to wellington
I'd go for number 2. The south island is amazing.
