Hi!
There's really only one way to go from Brisbane in January, and that's south: escape the humidity from the wet season. I'd recommend either just following the coast south to Sydney, or maybe flying to Adelaide and then making your way to Melbourne via the great ocean road, and on to Sydney from there.
Or if you like hiking, I could recommend hopping over to Tasmania and Cradle Mountain National Park.
