Depending on whether you are flying directly into Leh or making your way by road will make a difference in your acclimatization. Leh is at 3,500meters and so it takes a bit of getting use to.
Things are very spread out in Ladahk, so to go hiking you can't just walk out the door in Leh and be on the trail. You have to figure out buses, etc. Its also very difficult to follow any set trail. Its not like it will be one trail, there will be paths going every which way and asking someone is pointless, they always seem to tell you the wrong way! Thats assuming you can find someone to ask! Although you could hike by yourself, I think you'd have a more enjoyable time with a guide. They can point out the places and things of interest, and they can organize getting you to the hike head and pick up at the end. There are loads of companys in Leh. I have a couple of friends that run guide company's if you want their details?
The previous paragraph probably takes care of your questions about staying in families houses, since if you go with a guide they will take care of that too. But yes you can stay in peoples houses. Basically you have to ask around and find someone that understands enough English to understand what you are asking for and then someone to point you to the house. there generally isn't a sign on the house. The people are tremendously friendly, and its a great experience, although a little awkward at times! Either way there isn't much point in bringing a tent.
As far as the weather. Its very high altitude and anything can happen. During the day you will be in tee shirts and hot and at night its quite cold. I was there in August one year and it started snowing in Leh. You can bring warm clothes, but if you have limited room to carry things and you can spare the cash, you can buy great knock off North Face gear there and other name brands. Or really good local made woolen clothing.
Getting to kashmir from leh can only be done by road. you can either get the bus, or better is a shared jeep. Lots of tour places in Leh can arrange these. I did it by motorcycle and it took about 3 days. Just remember once you get to Kashmir you still have a long way to go to get back down to Delhi.
