If you pick up a car in one place and drop it off in another place/state, you could incur a big one way charge (as in someone may have to drive it back). You can fly about and hire cars locally.
SF you can take a helicopter ride around the bay, take a tram ride, Pier 39 for some shops, Chinatown, Japantown, etc.
Lots of motels on the way south but when I stayed at them long ago they were under $20 a night. Ten years ago the same ones were $60 a night and no better. Rip off.
Check out Hearst Castle on the way down. Watch out for cops. If you see a motorbike, it could be a cop.
Venice Beach is a beach with crowded walkways where they sell tourist tat.
Disneyland is the same in any of the parks around the world. Universal is better and you get a second day free.
I went to Tijuana a decade ago. What a dump.
Las Vegas is just lots of ways to lose money. The Grand Canyon or whatever would be better.
Dallas? Not really that much there but the point here is that it is quite a bit out of the way.
Miami? Not a lot there. Why not Orlando instead? Lots of theme parks, etc there.
You are trying to do a bit too much too quick, and travel whether by air or by car is expensive.
But you don't say when??? It does make quite a difference - the entire Southwest is now burning! I would not drive across the desert and through Texas this time of year - not only will you be bored to death, the heat, dust and smoke will not be pleasant (even with AC).
Tijuana - is your insurance paid up?
Highway 101 - why take a terrible road when you could take the scenic Highway #1 instead. You also want much more time in SF and much less in the LA area.
I agree with the previous post about rental cars - extremely expensive to do a one way drop. You want a mix of air (Southwest Airlines) and car.

Sorry about that we are planning to do it in late September early October?
Also I've looked at the car rental online with different pick up/ drop offs and it's only working at £40 each for a week...
I am in the process of changing this plan now am taking out Tijuana and flying out to Nashville and driving to New Orleans instead of going via Dallas
If you decide you want to go straight from SF to LA, then you'll need to take 101 because Hwy 1 is too slow. In that case, a good halfway spot to stop is either in Paso Robles (wine country) or else San Luis Obispo (a college town that also has wineries nearby and a beach (Pismo) just a few miles south.
But Daawgon is correct--you would be better served by taking 280 south to San Jose, then taking 17 to Santa Cruz--then taking 1 south to Carmel/Monterey and spending the night there. The next morning visit the 17 mile drive then head on down 1 and see Hearst Castle, then go on to Solvang or Santa Barbara to spend the night. These two nights will leave you less time in LA--but the best thing to do in LA is head down to the southside beaches (Huntington Beach or Newport Beach) and then go to San Diego the next day.
If you want to go to Mexico (and you are doing so in the summertime/early fall), go down the toll road (ruta cuota) to Rosarito Beach, which is about 20 miles south of Tijuana--and is not the dump that the tourist section of Tijuana is. (P.S. Tijuana itself is actually a great city--just not the tourist section on Revolution Blvd). Down in Rosarito is an active nightlife scene in the summertime--and you can ride horses right on the beach in certain sections.
