I've done working holidays in both countries and although I loved Vancouver and the other parts of Canada that I saw, my time in New Zealand was even more enjoyable and I feel that it has more to offer as a country. I also think you're more likely to meet people in New Zealand, as it's more geared up towards working holidays and there are so many people doing the same thing.

The reason why I want to do the working holiday thing is to get a "taste" of one of the countries before hopefully settling there permanently. While I realise that my stay would probably be more eventful in New Zealand, I am still not convinced whether the place has a lot to offer in the long term, particularly in terms of work opportunities. I enjoy a big city lifestyle but at the same time I want to have good outdoors on the doorstep.
I believe that Vancouver or Toronto would have more opportunities in my area of study (marketing and PR) and would eventually sponsor me for a permanent residence visa. What do you think?
Vancouver definitely fits your criteria as it's a great city with fantastic scenery close by. Auckland also has fantastic surrounding scenery too, although it might not have quite the same big city feel, even though it has a larger population than Vancouver.
I'm not sure about opportunities in your specific profession but it would be worth checking the immigration sites of both countries, because visa sponsorship can often depend on whether an occupation is in demand or on their 'shortage skills' list. The has some good info on this.
It depends where you live as if you are living in Europe or Australia then I would say go for Canada as it will be a totally new experience. If you are living in Asia then go for New Zealand.
