Your schedule is doable, although I'd shorten the time in Cologne and lengthen it in Amsterdam, personally. What are your plans for Monterosso? Is there a reason you're skipping Rome? It might make more sense to do Rome and go north and skip Barcelona (leave it for a different trip) to save on travel time. So, Venice to Rome, through Florence to Monterosso and up. If memory serves there are overnight options to Paris from northern Italy as well.

The interrail pass can be good if you're under 26. Keep in mind that I'm not sure if you can use it on the ferry out of England and the UK operates under different rules (britrail pass). You may also want to consider bus/train combinations, as well. The x number of days in a period passes may also be better given your itinerary & timeline. Ecolines, eurolines, and bus about all have passes and there are individual bus companies in most countries as well.

If you do take the pass, unless something's changed there's a lovely boat ride available down the Rhone river you could take on your way through Germany. It's a nice way to mix up the travel and a lot of castles en route towering above you.

I like it, except my preference would be to allow for a day of travel & then two full days in each place. Giving a little bit more of a relaxing pace.

There are several Monterossa's in Italy. I assumed the one near Las Spezia ( for Cinqe Terra, which is very nice ) & so I put it between Venice & Florence.
Skip Barcelona & an extra 2 days in Paris

So it might look a bit more like this.

In Amsterdam check out the Regional as well as the City bus pass. And the Amsterdam card for Museums + transport. The regional gets you out to Edam & far outside Amsterdam.

In Munich, check out getting to Neuschwanstein Castle - Magical.

Look at for all things train.

If you cut out Barcelona you could also add extra days elsewhere - day trip out to Dachau in Munich, or just spend more time in a city or two as Steve's suggesting. Assume the travel days are almost a wash. Even if you're not going far, packing up, checking out, getting to the station, etc and the opposite on the other end will kill a large part of your day.
