I would like to help out on small farms or nature places especially in countrys such as Norway as I would love to see that kind of nature. It would be fun to get to know other ways of living while helping out around the place.
Look up Earthwatch and see if one of their expeditions interests you. This is a charity of sorts where you have a choice of different projects to work on overseas. You will be with other tourists in same hotels, sharing meals, etc. Back a long time ago when I still had a real job I did a three of them. Two to Thailand and one to Indonesia. (For me back then this was also a tax deduction too!)
If you are less outgoing because of shyness I don't think anyone will bother you about it. Were you picked on in school or picked on at work because of shyness or did people just accept you for what you are? The 3 expeditions I was on women outnumbered the men probably 3 to one. Several were teachers, some couples and various ages from early 20's on up to retirees.

There are many people who like introverts and shy people. So they become comfortable with them.
I hope you will find them too. But don't stop travelling due to this.
You will learn and experience in your own way.
When looking at organizations like Workaway, be aware that it is not always legal for someone entering a country as a tourist to participate. The responsibility for making sure what you want to do is legal, is YOUR responsibility. Businesses (that's what they are) like Workaway, WWOOF, etc. do NOT always make it clear that you cannot legally participate in a given country. They are in the business of selling memberships and aren't always up front about everything.
For example, it is illegal to participate as a tourist in the USA. It is legal in Canada for up to 1 month.
You may also find that your travel insurance will NOT cover you in the event of an accident while participating in one of these 'volunteer' enterprises. The organizations can call it what they will but just like USA immigration, insurance companies tend to call work, work and travel insurance does not cover working and certainly not if working illegally.
I think being a shy/introvert shouldn't be a big problem when you travel. I am also shy and I noticed that most of the time it is easier to make friends while travelling - people you meet will be more open-minded and curious about you.
I was using Workaway, WWOOF and helpx.net and had mostly good experiences.
But you haven't said if you were using them legally or illegally and in what countries Maramar. Having had good experiences doesn't mean anything in terms of suggesting someone else use them if doing so would be illegal for them to do.
