We stayed at this resort last year and loved it.
We were planning to stay again in Jan 2017 so I contacted reservations directly and asked them for a quote, reminding them of a Scoopon deal that is around at the moment.
They said that they would match the deal and have sent me a formal quotation.

Interesting conundrum and probably not uncommon. In many countries (UK, New Zealand and certainly others too), you would be able to hold the hotel to the quote because consumer groups have campaigned for the rights of purchasers and the law is on the side of the purchaser. I'm not sure how that stands in Thailand.
Probably the best you could do is threaten to post uncomplimentary reviews on websites such as this and others unless they honour the quote but I wouldn't think that would have a great deal of sway looking at all the positive reviews they get.
Once the management responds to you, please let us all know how it's going - I for one am interested!

Old school or new school. You are very much right when you say "a quote is a quote and should be honoured" .Your quote sh be honoured. Though they have not honoured their quote.

I have emailed the resort directly and asked NOT to speak to reservations.
I have directed the email to management, surprising enough ( NOT) I have not received a reply.
Watch this space and yes you are right, I will at the least let everyone know and new or old schools have the same principles, honour what you say, standard business practice.

All quotes should of course be honoured as that is the only 'honourable' thing to do. However, we no longer live in an age of honour unfortunately. So that only leaves the question of what is 'legal' and that differs by country. If we assume the law requires that quotes be honoured in Thailand, then your only recourse beyond what you have already attempted, is to go to court in Thailand. Obviously, that isn't really a practical option.
If it were me, I'd notch it up to 'live and learn' and move on to somewhere else. Preferably a country and company that understands what honour is. Try Switzerland.
I am not sure if Legal and Thailand should be the same sentence.

Just for interest sake, I have a quote for $2700 AUD which has turned into $7000 AUD.
Go figure

A quote is a quote is a quote.
Generally, if you've booked, paid (in full, or perhaps with a deposit), and have written confirmation, then you've got a deal. Prices can change until then. This applies not only to hotel rooms, but to other things as well, such as flights and tours.
Some businesses seek to generate goodwill by accommodating customers as best they can, even if they've made a mistake. But it all depends on circumstances. Of that, we know little beyond what you've posted.
You're angry the resort; and unless they meet your demands, you're unlikely to be satisfied. Time to move on. You might be helped by reviews of the resort on TripAdvisor.com. There was someone who used the discount you mentioned, but wasn't so happy about it. Perhaps it's a good thing you're not staying there.

Hi,
I have received an email from reservations apologising for the delayed reply.
They are waiting on their manager.
With a bit of luck, they may use the " goodwill" policy.
I may have written my original mail a bit jumbled but the quote was not using any deals e.g Scoopon
