Simply let your eyes and nose guide you. I've done this in scores of countries, often with more success than not.
But pay attention to detail. Kolkata is known for its street food; and I once saw a crowd eating at a certain stall. I figured the food must be good with so many people there. So I ordered a plate. But after I ordered, I saw a boy handing the cook plates that he had wiped with napkins thrown by customers into a box after they had eaten. Yuck!
Know that in some countries, many people and sometimes restaurants prepare food only once a day. Be careful if there is a lack of refrigeration; and food has been sitting around a while. It's best to see food prepared in front of you; and it's piping hot. When In doubt, ask!
I once was felled by food poisoning in Myanmar years ago; and learned from the experience.
