Hi,
(Reminder.) For Thailand without a definite departure date and staying past 30 days you will have to purchase a Tourist Visa ahead of time. For the free Visa Exemption stamp tourists get at arrival (Bangkok) you are supposed to have a flight out of Thailand within 30 days. When and if enforced it could be at your home airport and you may not be allowed to board!
A definite departure date makes it easier to plan a daily budget out. Sometimes round trip might be cheaper too. When I do a Google check with my laptop for "Open Jaw flights from London to Bangkok" several links come up. A local travel agency in London might have some advice too. You have nothing to lose by calling your favorite airline and asking them.

karazyal - thank you for finding the time to respond! We have checked the links out that you sent over and are now thinking of using the idea to travel to Europe first and then fly to Bangkok.
