Visa:
Thailand:
a) get a double/multi-entry visa for 3 months in the UK.
b) alternatively, you can also enter Thailand without obtaining a visa in advance for 30days if you fly into or 15 days if you arrive by land. Note!!! They may ask you for proof of return ticket/outbound ticket, especially at the airport!
Before, you're going back to Thailand again by land from a neighbouring country, and you need more than 15 days, you can easily get a thai visa in Laos or Cambodia.
Cambodia/Laos/Vietnam:
Easy to arrange visas on spot for the other countries.
Usually, fairly easy and convenient using agents to arrange visas for you, paying a few extra dollars worth it.
Agents will give you the application form, you can make passport photos in Bangkok easily.
Laos: pick up visa at border, make sure you have US$ 35, don't pay in other currency.
Cambodia: don't get your visa at border, you will pay triple price (bribe), arrange visa in advance in Bangkok, Laos (Vengvieng, Vientien, LP). Fee US$20.
Vietnam: arrange visa in Laos, Cambodia in advance. (Visa on arrival might also be possible for UK citizens, but not really clear...). Fee US$25.

I can't comment on full moon party. I personally never book accommodation beforehand, but maybe it is a very busy period. You can inquire from other tourists when you are in thailand.

For Vietnam it depends on how you arrive:
by land - you must have visa already in passport
by air - you can use the VOA Application Letter purchased online at any Vietnamese travel agent and visa will be placed in passport at the airport (if you prebook a hotel in Vietnam, most can sell you the VOA App. Letter too)
(in both cases you must prearrange for a UK citizen)

Phnom Penh is the fastest, cheapest city to buy your VN visa. Most GHs will do it for you or many businesses as well. Do not try and do it yourself. Not worth the time or hassle to save $5. I use Lucky, Lucky Motorcycle Rentals, one day service at a decent price. It will be around $35 for a 30 day VN visa. The VN Consulate in Sihanoukville will do it in one day for $35 as well. This is much cheaper than your home country or Thailand. Good luck.
