I would suggest you to go to Spain, especially Andalusia region for things like or Barcelona (be careful, although the city is safe, there is a lot of pickpocketing). I think Spain is better than the Netherlands or Italy (though, of course, it depends on what one likes).
You might wanna see the French Riviera (e.g. Saint Raphael) and then Monaco
Apart from Spain and what you have written I'd be wondering about changing Prague for Cracow, though it's quite a tough choice to make.

It sound like You're planning a nice trip. I'm just thinking that, even you have quite a lot of time, you might have planned to see too much. You're gonna have to move between the cities 2 times a week which gonna take quite a lot from your holiday. It's doable though.
I would probably skip madrid, dublin, bari. Thay are great places but maybe it's better to spend some more time in other cities or see some mediterenian coastline or islands. Up to You of cours.
In Greece I would recomment you to see Meteors. Frankly If I had a chance to see Athens or Meteors once again I wouldn't even have to think for a second. Meteors win!!! Spectacular.
I know this is probably way too many places for a 6-8 week trip.

I agree with the points raised above. There are too many places in too short a time. You will spend a lot of time travelling between them and not enough time in them. Quality of destination is usually better than quantity of destinations.
You may be better sticking to one region, for example southern Europe (Spain, Portugal, Italy, Greece), and exploring it thoroughly with small journeys between towns and cities rather than a mad rush to try and see it all in one trip. It also leaves places to come back to in your next trip.
