Hey, my name is Rosie. I'm currently travelling up the east coast of Australia and will be flying down to Sydney for christmas and new years. I'm looking for some accomodation from the 29th December to beginning of January- if anyone knows of any spare beds, please please let me know as i don't really want to sleep on the beach. Thanks!
You're looking at minimum stays (7 or 10 nights), outrageously expensive prices, and probably both. Given that, searching for a stay from the 29th onward on the (which combines hostelworld and hostelbookers), gives the following option:
6-bed female dorm in the for $45 a night. (Note: this place is 10km out of the city. I assume they'll arrange some kind of group transport into the city for NYE, but worth checking beforehand, or being prepared to figuring out something yourself.)
Plus a number of those outrageously expensive places, none of which I personally think are worth going for.

I suggest ringing all the hostels or emailing them, good luck though. I booked mine back in april/ may time.
Rosie, having been in the same situation where desperately searching for NYE accomodation ive just found a space at Kings Cross Backpackers, might be worth a go although i cant vouch for the place having never stayed there!
