Coming from the UK with UK passport too?
With round trip ticket to Bangkok you qualify for the free 30 day Visa Exemption when you fly in. You are supposed to have a round trip ticket or a flight out of Thailand to qualify. (Proof of onward travel.) Just leave for the other countries before the first 30 days is used up.
Recent change allows G7 nations to get a free 30 day Visa Exemption even when entering overland.
You shouldn't have a problem entering Thailand again. You are stamped out of the first Visa Exemption you get at the airport and when you enter again you get another free Visa Exemption. Assuming you are flying out of Bangkok with a confirmed ticket.

Yes I am a UK passport holder. I should have stated this clearly. Sorry.
So basically, I get stamped for 30 days visa when arriving at the airport. I leave after 20 days and go to Vietnam/Cambodia for 25 days. Then I come back into Thailand overland for 15 days stay and get another (free) 30 days visa stamp?
So I don't have to do anything but turn up?!

Yeah, should work with confirmed flight. But it is really called a VISA EXEMPTION when you enter free with a stamp in your passport at immigration.
(With UK passport you will get 30 days now even entering overland.)
