As usual with questions like this you fail to mention the single most important piece of information: What's your nationality?
Assuming that you're a Brit with a short fuse and little common sense or self control then your criminal record will have no effect on getting Tourist Visas in that part of the world.

Apply for visas before you buy your tickets and see whether they will issue them. You MUST be completely honest with them. Example. Australia have not allowed in at the destination airport people who lied to them, and allowed in some who did admit convictions.
What you need now is to keep your nose clean for the next two years and show them that life is behind you. If there were mitigating circumstances like drink and/or drugs, then show them that you no longer abuse these substances so have changed for the better. It would help if you hold down a job, so have someone that trusts you.

Indeed, if you are Brit, I don't think anyone would ask you your criminal records before giving you a visa.
So as you said from Australia I'm going to presume you're Australian...
I don't know about the requirements for India and China applications but I would suggest checking with the appropriate embassies.
You didn't mention it but I'm also going to presume you're travelling SEA as a tourist. There are a number of SEA countries that give Australians a 30 day visa on arrival or don't require a visa at all for stays of 30 days. You can check various requirements through http://en.wikipedia.org/wiki/Visa_requirements_for_Australian_citizens.
Whoops, my mistake, I totally missed the "from Australia" comment. Sorry...

I suggest you don't try the local prisons. They are bad !
As said, don't even think of committing any crimes and watch your alcohol intake in Asia. There is a book called THE DAMAGE DONE by a drug smuggler who was caught (buy it or a free download ebook) and it demonstrates the horrors of an Asian prison.
