Manali is a center for trekking agencies. I am sure you will find a good one just simply asking around locally.
Better to stay in new than in old Manali.

October is a bit borderline for high altitude areas but if weather permits, try to go to:
- Spiti Valley and go up to Comic Monastery at Kaza (should you decide to trek down back to Kaza, it's a bit scary, don't do it if weather is bad), and Tabo
- Pin Valley
- Keylong and climb up to Shashur Monastery
- Trilokinath in Pattan Valley
If you have made this amazing trip, which can be done without a guide, you can still consider do extra trekking.
Also amazing in Himachal Pradesh:
- Parvati Valley: Manikaran sikh bath, Tosh/Pulga and Khiriganga
- Chamba Valley and Dalhousie / Khajjier national park

(I think after this trip you will not find the touristy mcgload ganj very interesting...)

Golden Palace in Amritsar and Pakistani border ceremony are also top experiences in Northern India.

Laos: problem is that the places visited by 99.99% of the tourists are just nice towns rebuilt for tourists. The real Laos is outside of these place. So, only very-very few travellers see the real country. If you want to do that, best is to rent a scooter and drive around. I highly recommend North circuit by bike: Luang Prabang - Nam Bak - follow road east toward Vietnam border - turn south down towards BanBan and Phonsavan - go back west to LP-VengVieng road - go south to VengVieng. Food and lodging will be very basic, but you can tell after a trip like that you have seen Laos, unlike the other 99% who went to LP, VV and Capital, etc.... It will also be an amazing experience....
