Sierra Nevada is absolutely beautiful. you can go to the village called trevelez and continue the street for beautiful panorama.
I loved the city Granada. it's on the foot of the sierra nevada mountains and you see the snowmountains behind the alhambra.
if you like alternativ lifestyle, you can go visiting the 'hippy' villages "beneficio" and "san pedro"
in Tarifa you can take safaris to see dolphins and whales. There you can aswell take a ferry to Marocco.
in Gibralta (not spain anymore) is a rock or "mountain" of monkeys. which you can go and watch.
Are you only travelling in Spain?
Barcelona is great for its diversity. You'd love it if you like fiestas and arts (Gaudi too of course.).
I agree to Brouillard about Granada. The Alhambra is one of the most beautiful places I've been in Spain.
Sevilla is another Andalucian city that I really like. And if you travel further south to Costa del Sol, perhaps you could also give Morocco a thought too (there are cheap ferries depart from Algeciras everyday)..
