I am currently on a 3 month trip in SEA. I arrived to Thailand around 20 days ago on a 30 day visa exemption. I am leaving for Vietnam in 3 days - during this trip my plan atm is to enter Thailand 2 more times before leaving and returning to the UK at the end of February - my time in Thailand will not exceed 90 days. So this is ok, I can use the 3 30 days visa exemptions.

Seems fairly straightforward.
My reading of all this leads me to think that since you have to apply for a visa, the fact you had prior admission ( under visa exemption ) is immaterial.
But - the only way to know for sure is to ask the Thai authorities. Use their 'Contact us' button.
