Hi, I'm from Aus and think that is totally do-able! I would have a base plan with some places you want to visit and go from there. It is a long drive, but if you plan it out you'll be right and have your 2-3 days in Cairns. My advice would be flying back so you have more time to drive up.
I would look at choosing to stop in maybe Byron Bay, Brisbane, Sunshine Coast, Rockhampton and maybe Townsville if you want to do coastal. Otherwise inland is more direct and have more national parks to visit.
