I'd go greyhound every time. It's just regular public transport, where you make your own itinerary, rather than a tourbus that goes in one direction only and tries to upsell loads of activities to you.
Meeting people is super easy in every single hostel along the way (they're all doing the same as you), so no need to go with a tour for that either. (Same, fwiw, for oz intro, ultimate oz, and all those other organizations. You don't need them, and can do it cheaper on your own.)
Awesome, thanks. I think I'm still going to book on Oz intro for when I first arrive, more for my own peace of mind and a starting point for me! Hopefully things will just go smoothly and not be so scary after that! Thanks Sander!x
