When you say 'hop', does that mean flying is out or in as an option? Stockholm from Copenhagen isn't a problem at all, whether you chose to travel by train or plane. Likewise, Norway from Copenhagen by either train, boat or plane should also be very doable in that kind of timeframe. However, if you aren't flying, visiting the part of Norway that's most famous for its fjords is going to be difficult (ie. a lot of travelling time). Of course I'm assuming you're talking about some of the more spectacular fjords in Norway, not the Oslo fjord for example (which would be quite disappointing if you are expecting a 'real' fjord!).
