Personally I like the Sonaisali Island resort. It is a 4-4.5 star property depending on where you see it advertised but is often priced at about a 3 star rate. It is fairly close to Nadi without being too close. It is an island resort menaing you have the beach and a huge swimming pool with a bar that you can swim up to. By no means is it the cheapest place in Fiji, but it is definitely the best in terms of value for money. It is also close enough to the airport so you don't need to change hotels the night before your flight like is the case with most island properties.
