I assume you have your VN visa. If not, covers my flight into SGN and getting from the airport to Pham Ngu Lao area of HCMC. This is the backpack area of HCM. Many of the cheaper places to stay/eat are here. Also many tours leaving from this area as all the tour companies have their offices here.
With just 5 days it is going to be difficult to much other than HCM and delta area. I suggest a ione day tour of HCM. That way you will see all the main attractions: Reunification Palace, War Remnants Museum, Notre Dame Cathedral, main Post Office, some pagodas, shopping. At least a day tour of the Mekong Delta, perhaps 2 days if so inclined. Cu Chi Tunnels is a half day option as well.
With only 5 days, it is possible to see another city, but it would be difficult. You could make use of the overnight bus and get in 1-2 days of beach time over at. Or . Or you could spend 1-2 days in if you want to get out of the heat and up into the mountains. About 6 hours via bus from HCM.

If I only had 5 days in Vietnam, and was entering via Saigon, I would explore the Mekong Delta and Saigon only. Those bus/train trips can eat up a great deal of your time. Next time, I suggest going to Hanoi, Sapa and Hoi An. Go to travelfish.org for very good Vietnam tips.
why don't you visit Hanoi? maybe 5 days there will bring the funny experience for you. I think so. Now i am living in Hanoi. You know Hanoi has celebrated 1000 years. many historic places....beautiful and memorable. however, at that time, Vietnam has rain and flood in the Central. contact me if you need my help in HANoi. at least i can speak E and guide you
5 days in Ho Chi Minh City would allow you to fully enjoy the city.
You can take a half or day tour to Cu Chi Tunnel and another day to Mekong Delta.
They are really interesting.
Rest of days you can explore HCMC; seeing Water Puppet show, having an original Vietnam coffee, eating delicious pho, etc.
Accomodations are easy to be found in either De tham / Pham Ngu Lao / Bui Vien streets - known as backpackers area.

Yes, you need a visa to enter VN. My blog entry: covers visa on arrival. That is the way to go if flying into VN. Get yourself to Pham Ngu Lao area, De Tham St. Use a taxi as I did (blog). There are so many places to stay in all price ranges. I stayed at Xinh Hotel in mini hotel alley for $10/nite. OK room with a/c, hot shower, tv. Many other nicer choices close by. I would suggest you use the 'accommodation' option, top of this page. Select VN, then HCMC. Look in your price range and see what is available at what price. Some members prefer having a hotel booked before arrival. Select a few, then go to 'tripadvisor' and see what others have to say about that hotel. I just wing it, but have been to HCMC many times. Your decision.
