There are a lot of great wildlife parks in India. Corbett and Sunderban National Parks are really great. You could also try to do extreme sports in India like rafting, trekking, and wildlife camping. I hope you're up for extreme activities though coz they are really fun!
First, you should mention your preferences. Then it'll be easy to guide you.
wildlife, temples/architecture, meditation/yoga, city culture/night life, beaches etc ....
Do north first as later it'll become more cold (not as cold as Europe or US though ). Also you can do away with carrying heavy woolens.

Welcome, I must start by saying be ready for a great adventure!
Firstly, 8 weeks is not much to explore India even if only north & south but as thats what you got I can advise on northern India as thats where I come from.
Secondly, if this is your first trip to India come with a open mind and do read a bit about Indian cultures infact I would recommend you to buy 'Being India' by Pavan K Verma, its a brilliant write on India n its cultures.
So, divide your trip into two, 4 weeks north & 4 weeks south. North, start from Himachal, visit places like Manali, Rohtang, Leh & Ladhak (cold desert, buddist monastries), Simla(Summer capital of India during British Raj & my home town), Daramshala (H.H. Dalai Lama's Abort) Tatapani (hot spring next to Satluj river), if you like trekking go upto Shikari Mata (goddess temple situated at a hight of 2800 mtrs, 5 hour walk). Then come down to Rishikesh (holy place of hindu's, on the river Ganga, a must witness for every foreigner), Travel to Agra for the Wonder of the world 'Taj Mahal' and then back to Delhi. This should easily cover your 4 weeks.
Southern India is totally different delight and should be advised by expert. I have only been to Kerela (tea gardens and back water house boats), Goa (beaches & sea food) and Kanyakumari (Sunset and sunrise cos its the southern most part of India and has a brilliant view of the Indian ocean), I strongly recommend to any one traveling south India for the first time.

its a very interesting question. India is the land of unity in diversity. from east to west; north to south India is the land of varied culture and language. So its very good if you go for indian heritage tour.
nevertheless wildlife tour, trekking tour, rafting tour, historical tour, pilgrim tour, beach tour are some of very interesting tour. these tour must delight you.
But before deciding any thing about the tour its batter to contact to any good tour operator. who must give you the full value of your money.

we're hoping to do both north and south in the 8 weeks, do ye think that's enough time?
our plan was sight seeing temples etc. possibly trekking in the north and the relaxing down south at beaches etc. but kinda interested in everything! plus DEFO wana do elephant trekking, does anyone know when to do this? or tried it out themselves?!!
