You should miss your volunteering placement which you are paying way too much for (£1400?), this will free-up your budget. You are planning a long trip but 4k is enough for what you have in mind.
There are places in Cusco where you can volunteer for free (you cover you own living costs in a hostal) or find a homestay.

You have time to see both (and more) look to spend a 4-6 weeks in each.
WRT your other question:
I'd suggest buying an open-jaw ticket, i.e. fly into Lima, fly out of Rio or Buenos Aires (whether it be back home or to continue your trip). Spend 6 months traveling in SA, e.g. south to Tierra Del Fuego (South Argentina) and back up the east coast, have a 1-2 month volunteer stint in the middle.
So to answer your original question I would take Nepal out of the plan, you can head out there on your next trip.
