Check out the travel partner section of By November NZ is getting pretty busy, so even if you just headed over without a firm plan, you could look at the notice boards of any of the many hostels and find others offering rides to all the usual places.
I've travelled with Stray and Magic and thought both were really good. One of my trips was a month and I didn't find that it was too long on the bus. The passes that both companies offer are really flexible so you can spend as much time in each place as you like, and they're sociable without making you feel like you have to participate in everything.

Probably Magic as they seemed slightly more professional and their buses seemed to be in better condition. Stray claim to get more off the beaten track though - one of the reasons I chose them for my South Island trip is because they went to Stewart Island. That was a few years ago now though so both companies may offer different routes/passes than they did then.
Most foreign driver licenses are acceptable in New Zealand (check with your travel agent). New Zealanders drive on the left, give way to all traffic crossing or approaching from the right. Most rental car companies will provide a short list of the more important rules.
