maybe I am late with my answer, but if not you to do your desert trip you need at least 4 days if you wish to enjoy and not only sit in the car. You can go self, by bus or rent a car, you not need to go with some tour company. It is easy to drive, road are good and by bus it is comfortable also. Look at http://www.oncf.ma there you find schedule and prices.
Both Ergs have tourists but you not need to be worry about to see many of them. Erg Chebbi is higher and the colors are fantastic. You can easy do camel trek in erg Chebbi while to do camel trek in Erg Chigaga you have to go then by 4x4 to reach sand dunes and they are not so colorfully. But it is depending of the person taste of course, some prefer Chigaga some Erg Chebbi.
And in both when you arrive to there and find some accommodation, they can arrange for you the camel trip with overnight in the beduin tent.
