There is a forum on Travellerspoint for people looking for travel companions. You could start there.
Much of Europe will be pretty cold in January, but it's not a bad time to visit Greece, which is still warm enough. It's a beautiful country, with lots to see.
Use common sense, when it comes to safety, and always keep your passport in your front pocket. Don't leave it at the hotel. Some people like money belts, but frankly I don't think they're necessary. And they aren't comfortable.

Seriously though, have a great time. Stop worrying about arranging a travel companion beforehand though. Why arrange to travel with a complete stranger when you'll be meeting loads of other backpackers in exactly the same situation as you are. If you don't like the solo scene you'll easily hook up with someone who feels great. Tranquilo!

Don't forget to regularly check in with home - it makes sure they know you are ok and also if they don't hear from you they can act to check up that things are still going well. Always useful if things don't go according to plan.
And Terry is right - meet people as you go!
Its also useful to have your first night anywhere booked in advance so you can get your bearings and not spend all your time looking for somewhere to sleep!
Good luck on your journey! Europe is definitely a cool place to see when you're so far away from 'home', haha.
Finland is always a cool place to visit even though it's quite cold that time of the year. I think not so many people have been there because it's a bit north from everything but I recommend it. Of course because I live here, lol. But it's definitely a cool place and i'm always up for showing around and catch a beer (or more).

P.s. do take more money then you are expecting to europe is very expensive but very nice and safe place to start on your travels have a good time
