I'm just going to touch on one thing — "how easy is it to get bar/hostel work etc?"
Remember that this adds visa concerns – administration, funds, etc. If it is possible for you to work remotely then I would suggest using this option as your primary source of income. It will give you more flexibility in moving around and my attitude is that it would save the hassle of organising a work visa for each location, unless of course you can pick up a working holiday visa somewhere. It also means you can work from fabulously cheap locations like Bali or Thailand, should you need a break from Scandinavian prices.
