I would say Maui is a good choice.
In my opinion Oahu is not the good one as first. (too many people, too many buildings)
Both Kauai and Big Island are far better !
The problem is probably you have to land at Honolulu! Look carefully if you have any possibility to go directly to Maui. I did it coming from US west coast. Then choose Kauai for wildness or Big island for Volcanoes. Or both

Unfortunately from Melbourne the only direct flight is to Honolulu, so we would have to get on another flight to Maui.
Would you stay in Lahaiana in Maui?

I do not know this place. I was based in Kihei which is more central but If you have a car it doesn't really matter.
The trek in Haleakala crater is really superb

look things over on gmaps. Lahaiana is a somewhat isolated beach front tourist trap which you can tell on gmaps streetwalk. be sure to do the bike ride down the haleakala crater. stay in the kihei or Kahului area. drive the road to hana.
There are many isolated areas on Oahu. ride bikes the far end of the north shore or go horse back riding where they shot Jurassic park. visit the royal Hawai'in birthing rocks.
