I'm currently looking for places to visit on Vietnam's east coast, we'll probably be heading down the coast from Hanoi too Ho Chi Minh.
Must-see places are Mekong Delta, Phu Quoc Island, Nha Trang, Da Lat, Danang, Hoi An, Hue, Quang Binh, Ha Noi, Ha Long, Sapa.

I put up a on a resort North of Nha Trang. there are several of these that are quiet and perfect for a couple that want away from the crowds. I hit both NT & Mui Ne for beach. NT gets the nod from me, better beach/swimming, more restaurants to choose from, great bay tour. I have blog entries for both spots. DaLat is worth your time IMO. I would pass on DaNang, just another crowed city. Beach at Hoi An is a better option. The ladies love Hoi An for the custom clothes, historic city worth walking, allow 3-4 days. Hue has plenty to see/do as well. Take a moto or boat tour to see the historic temples outside to Hue.

- Hanoi - Halong - Hanoi (2-3 days)
- Hanoi - Hue - Danang - Hoi an ( 4days ( train) - 3 days (flight))
- Danang - Nha Trang - Dalat (flight or bus) (3-4 days)
- Nha Trang - Ho Chi Minh (Saigon) (1 day) (flight or train)
- Ho Chi Minh - Mekong Delta (1day) (bus and boat)
- Ho Chi Minh - Cu Chi - Ho Chi Minh ( 1 day)
