well Arabic language isnt that easy to learn in a short way but i can say that the school you mentioned will be great as long they are offering staying with a host family.
you can check this link http://jadalculture.com/ contact them on facebook for faster response and there you can see some more about Arabic language courses they offer.
i'll get you other schools but all depend on your plans so tell me when is your arrival date and if you are interested in learning on your own online, i have a very good link with voice pronunciation for Arabic basics and advanced levels but need to dig into my old link files.
please tell me some about your work Habitat for Humanity because i'm very interested in earthbag building ways, but i just back to Jordan a couple of months ago and didnt take a look around for any of this activities yet.
