Instead of the usual shanghai-beijing-xian-jangze route I recommend:
Yunnan: Kumning - Dali - Lijiang - Tiger Leaping Gorge - short trip into Tibetan
This will be beautiful, culturally interesting, good mix of histroical town, nature, mountains and the developed china.
And you can balance your time out well doing this trip within two weeks, no rush, little travelling (in china terms), but enough jaw-dropping things to see. Weather will also be nice in May/June.
These places also have good infrastructure for foreign and local tourists. So, it is relatively easy to get around. Hostels are great places to collect info and meet other travellers.
Food is great in Yunnan and ethnically the most diverse in China.

From Hong Kong/Shenzen/Guangzhou either fly or (24hrs)
