I am travelling through India from Feb 9 - May 3 and would like some help with planning my itinerary as I have no idea where to begin.

Since you are going to Jaipur you must go to Udaipur as you will not regret it. It is a wonderful place to chill out especially if you have been on the road for awhile. It's a breath of fresh air in a world full of chaos. You will never want to leave it. They even have an airport.
We were in Agra for Holi and it was full on. Just be careful as some of the people are using permanent dyes to throw at people and they love throwing it on foreigners.
Another place to go for Holi would be Pushkar as there should be a festive atmosphere there as well.
If you are in the north Nepal would probably be the place to celebrate the Holi festival.
