This would be difficult without knowing what you both want out of a holiday. Hot weather, cold weather or don't care? Beaches, sightseeing, doing things? What kind of budget? etc.
Maybe Benidorm? It has a bad reputation solely because of young alcoholics in July and August. It's a great place other times of year and people go back there again and again. I was there for 11 days in December 2009 and had brilliant weather 9 of those days.
There's two good beaches, plenty of eateries (making AI a bit of a waste of time), shops, bars and live entertainment, trips and places to visit. Much of it is easy to walk around.
