3 - To work in Oz which are the visa options? (i have looked online but it is rather confusing)

As a UK citizen under 31, there's really only one option worth looking at, as it's orders of magnitude easier to get than any other alternative (fill in an online form, pay 180 pound, get it approved within minutes (up to a week maximum)) - the (get it directly from the department of immigration; any other service will charge more).

I was teaching english in thailand last year and it was so good that im heading back out there mid july! but i've decided to volunteer in cambodia instead, then go onto vietnam, laos etc, wanting to avoid the UK for a bit too! sorry this isnt of much help but i really share your excitement!!
i can give you an idea on prices, i went to the non-touristy parts in the north and everything was dead cheap, you could get a decent meal for a pound. the more touristy parts such as chiang mai and bangkok are a bit more expensive though they are still so much cheaper than the uk.. laos was a bit more expensive, but then i spent the week tubing so the prices were definitely designed for westerners!
