If you travel on the , you can stay in America for 90 days at a time. You can't work there on that visa, but my understanding is that is not something you'd be planning there anyway?
You can be in NZ for up to 23 months as a UK resident (). There's a few restrictions but unlike in Australia, you can actually work for one employer for the whole period it looks like (it seems like you can only work for 12 months total). Skilled workers can sometimes get sponsorship from a company which basically will let you stay as long as you like. But that is still a long way off, so not something I'd really worry about until it becomes a more likely/interesting proposition!

Yes I plan to just stay in America for the 90 days and hopefully visit a few other places before I go to oz.
Yeh I suppose I am considered to be in a skilled trade so I plan to do this out there and hopefully meet the right people, who knows what could happen!

Just another question,
For example if I wanted to book to fly to (San Francisco for e.g) to start my journey , is it just a case of booking a one way flight and then branching off from there?
You should double check visa requirements (sometimes you have to have a return/onward ticket to be allowed into the country), but that certainly seems like a way to get started. The big downside with one-way tickets is that they are often nearly as expensive as a return. The upside of course being flexibility... But if you know you are headed to NZ/Aus after that, I'd probably just go ahead and buy a ticket the whole way round, and just pay a little extra to make sure you can do date changes quickly/cheaply.

If you come to Australia on a Working Holiday Visa you can stay for 2 years providing you spend at least three months of your first year working in designated regional communities. Construction is one of those jobs, so you're very well placed.
And what's the best way to work in the community, is it just a case of speaking to the right people
Well, not having ever tried to find a job in regional Australia (let alone a carpentry one) I'm not well placed to say that. You can check the job websites to see what's out there, but I suspect you are right that just speaking to the right people is the best. There's plenty of jobs that never make it to job websites.
