i'm headed to thailand for several months. i'm a water guy. looking to snorkel, dive, sea kayak, but not entirely against seeing some mountainous areas.
Nothing wrong with seeing Chiang Mai for a change. Millions of tourists seem to like visiting there compared to just visiting beach areas only. Don't skip Bangkok too! Besides your partner might not really care for so much "water" locations.
From Bangkok you can fly to Chiang Mai, take a bus there or use a train. The overnight sleeper car is a popular way of going to Chiang Mai. If you are interested in the sleeper car get the tickets as soon as possible when you are in Bangkok. Sleeper berths go first.
Oh yeah, check what visas you need. Several countries over several months means visas will be required.

Since you're planning on seeing Laos, why not incorporate Chiang Mai into that part of your trip?
It's a common route to go from Chiang Mai up to Chiang Khong for the border crossing into Laos. Especially if you plan on travelling by river down to Luang Prabang.
CM is well worth seeing on it's own though. Very cool city. Great place to take Thai massage or Thai cooking courses too if that's your thing.

Just to say Personally if you are going to go to Thailand chang mai is a must, This place is the old thailand, lots of temples ect Very nice place to go.
Best way to get there is by night train, that is an expeirince in its self, playing card games with who ever your travelling with or just chatting, also it gives you time to catch up on some sleep as there are fold down beds on the train, See some great views aswell.
Maybe you will even meet Natalie , the 6ft 2 lady boy. Very nice young lady boy.
