I'm Cris from Italy,I live in the Susa valley ,about 30 km from Sauze d'Oulx.
I guess you can buy a map of the valley (there are many good enough,but if you want I can check what is the best and then give you the right indication of what to take) with all the paths and tracks on the mountain.These days there is not so much snow (but it's snowing tonight!) , so I guess you could have many options for some good hike
I think you will not rent a car but actually there is a good net of transport by bus.
Very nice locations for a half a day visit are Susa,of course,with the cathedral and the Roman ruins dating 2k yrs ago,Novalesa with his ancient and very famous abbey.
Then ,one thing not to miss is the Sacra of S.Michele abbey on the top of the mountain at the entrance of the valley.
It's the symbol of Piedmont Region,and for sure it's worth a visit on a nice day with a terrific view on the valley below and on the mountains. 5 stars visit absolutely.
On the French side of the Alps,not far from Sauze (half an hour by car,obviosuly with the public transport could be a little more complicated) there is the nice town of Briancon.

If you have an entire day,Turin is now a city you could not miss.
I was born there,and I admit until 15 yrs ago it was just an industrial city with many jewels hidden and half abandoned
But in the post-industrial era,Turin seems to be reborn.
There are thousands of nice thing to do there,is a very lively city.You will enjoy for sure its old cafè with the world famous hot chocolate (try Barratti & Milano or the Bicerin absolutely)
You will probably believe to be in the eighteen century France (indeed the royal family here was oringinary from France)
