June to July is approaching peak season but it does vary from location to location. For weekend visits to major cities I'd advise you to book in advance (but not too far in advance as you want to be a bit flexible as your plans may change once your in Europe).
In Europe generally I'd suggest booking hostels a day or two before your intended visit on hostelbookers or hostelworld. That said it is still extremely unlikely that you'll be left with nothing if you wait till the last minute unless there is some kind of festival/major event taking place in town.
Seen as it's your first trip perhaps book hostels for the first week of your trip and take it from there.

You shouldn't have any trouble getting a room somewhere, but I'd definitely recommend booking accommodation for your first destination in advance. It just helps reduce stress and means there's less to sort out when you arrive
