Hi,
I would stay one day more in Cappadocia. So awesome and a lot of sights. May be you can replace one day in Istanbul by an additonal day in Goreme.
And do not forget there is very interesting ancient sites between Selcuk and Bodrum: Milet, Didim

I remember a very nice walk in Soganli valley, also with carved churches.
and another underground city at Kaymakli.
I am sure you will be more confortable with 4 days

Zelve is also a very nice place with both chimney rocks and churches. I don't know if it is in your plan.
You know I was there in 1991. i don't remember all ! The best is you look at Cappadocia tourism web site to adjust your trip.

this day will be very hard to do ... the places that you picked is not so close. istanbul is a very crowded place so i suggest you to pick the places closer to each other. for example historical area asian side european side etc.

and you can go to kadıköy and the sea side till caddebostan also in asian side. there is a traditional food brand Çiya . you can find vegetables (ciya.com.tr)
in karaköy there is a place called Fasuli. (http://www.fasuli.com.tr/) it is a traditional kitchen of black sea side. you can find vegetable meals there.
nearly every where (especially restaurants that you can drink ) you can find " meze"(aperatives with drink) and vegetables food made with olive oil. nearly all kebaps are made of meat but sometimes you can ask. (you can find "pide" in these kind of places. there is a lot pides that made of cheese, mushroom etc. you can select.
you can try turkish breakfast ( in namlı (karaköy next to güllüoğlu (the famous baklava place)) for cheaper in beşiktaş (they are located in sinan paşa mah.)
in eagean side... there is a lot of places
may be you can try . alaçatı, dalyan, ölüdeniz, kalkan, kaş ... but you have to rent a car ... may be next time
i think you can pick the places closer otherwise you be tried of roads.

My sincere apologies for the delayed acknowledgment of your message. It has been a crazy past week for me. I am getting in to Cappadoccia fairly early on my first day. So I am hoping three full days should be plenty.

I owe you a huge "thank you" for taking the time to put this post together. My sincere apologies for not having acknowledged it earlier. Thanks a ton for the food recommendations. I will definitely check these out. My aunt traveled to Turkey a few years ago and raved about "Pide" - so yes, I am definitely looking forward to trying that. If you have any specific recommendations on where I can get the best variety of Pide in Istanbul, please do let me know. We actually have a güllüoğlu very close to my home in New York. They claim it is the best Baklava in New York. Is "Namli" the name of the restaurants? Please do let me know. Thanks once again for your prompt and helpful response.
