Hey there! If you're into farming/agriculture, there are lots of sites with charts for what's going on when. I don't know what's up in NSW. In WA I'm seeing lots of ads for seeding work. I know olive pruning is coming up over here in the winter. If you do a google search for seasonal work australia july (or "winter") you should be able to dig up some tips that cover the whole country (and therefore NSW).
